also regarding "it feels more like an album of sketches than fleshed out songs," the only two I'd apply that to are San Francisco and Wildfires, the rest of this builds and climaxes pretty well

I mean the band record something as awesome as 'The Gathering of the Clouds' and never try it again.
Think the reason for that may be they struggle to perform that sort of material live - I think they've become primarily a band who record material with the live show in mind now.

idk I like to think I can give someone a fairly grounded appreciation of certain things, but not sure if that's really the case with this band anymore. outside of that weird live orchestral thing they did 5 years ago, I've loved everything they've put out in the last decade

I mean they aren't Radiohead or Ulver, despite being very influenced by the former. They're more like Paradise Lost, who they share origins with in a lot of ways, in that every 3-4 albums they change things up just enough to go in a new direction while not straying from their core sound. It's more than most bands do, and I think that's about all the change they need tbh

I've heard everything album starting from We're Here Because We're Here and loved them all.
Which other albums of theirs should I be checking out ? Are their doom metal days worth a visit ?

I suggest checking A Fine Day to Exit because this album is more or less conceptualized as a sequel to that one and makes a few hints at that, so it may change the experience of this album a bit. That said, it's a very good album and has one of their very best songs, but it's still far from their best release imo. That would be Judgement, the one that got me into them and a wonderfully melancholic album. I don't think you can go wrong with it.
As for their doom days, I guess it depends on whether or not you like doom in general. If you don't I wouldn't bother, if you do they're worth a try.
