@Butcuss, this review uses hyphens (adjoining words) and *en dashes (partitioning clauses)! Technically you are correct, and em dashes should be used for partitioning clauses, but a) this is a pain using macbook keyboard shortcuts (and I had no idea my phone could even produce them until 5 seconds ago lol), but mainly b) really not a fan of seeing pairs of em dashes in the middle of sentence that continues on the other side — (there it is!) makes way too emphatic a gap for the interjection you're making, and English grammar can go yeet itself if it disagrees. The unpaired interjectory em dashes that pop up at the end of paras are fair game though, will tag those out
