06.09.11 | BBQ in the states is actually highly dependent on the area of the US you're in. Midwest BBQ differs from St. Louis, to Texas, to North Carolina, to North Florida. Even California put in attempts at BBQ, but it got made fun of, so they stopped. |

06.09.11 | Yeah its kind of complicated. The south east, like the Carolinas, use pretty much all pork and cover everything with a ketchup/vinegar based sauce. Texas is dry rub and brisket. Memphis, at least to my knowledge, is heavy on ribs and molasses laced sauce. KC and Chicago are big on ribs too, I think Chicago is big on baby backs, as is St. Louis. Or maybe St. Louis is spare ribs. Fuck Im obsessed with this stuff and I cant even remember. |
